- 70g Parmesan cheese, cubed
- 1 small garlic clove, peeled (optional)
- 50g spinach leaves, washed and dried
- juice of 1-2 lemons
- Himalayan sea salt and pepper to taste
- 60g extra virgin olive oil
- 30g nuts of your choice
- 1 cup basil leaves or 1 drop basil oil
Method:
- Place Parmesan and garlic into TM bowl and grate 10 secs/speed 8.
- Add spinach leaves (and basil if using leaves) and chop 5 secs/speed 8.
- Scrape down the bowl and add remaining ingredients. Pulse for a couple of secs until coarsely chopped.
- Adjust seasoning if necessary then top with extra chopped toasted nuts for an added crunch.
