• 70g Parmesan cheese, cubed
  • 1 small garlic clove, peeled (optional)
  • 50g spinach leaves, washed and dried
  • juice of 1-2 lemons
  • Himalayan sea salt and pepper to taste
  • 60g extra virgin olive oil
  • 30g nuts of your choice
  • 1 cup basil leaves or 1 drop basil oil

Method:

  1. Place Parmesan and garlic into TM bowl and grate 10 secs/speed 8.
  2. Add spinach leaves (and basil if using leaves) and chop 5 secs/speed 8.
  3. Scrape down the bowl and add remaining ingredients. Pulse for a couple of secs until coarsely chopped.
  4. Adjust seasoning if necessary then top with extra chopped toasted nuts for an added crunch.
