• 1 medium cucumber, seeded and roughly chopped
  • 1/2 ripe avocado, peeled and pitted
  • 1 cup of vegetable stock
  • 1 tbsp freshly squeezed lime juice
  • 1 small clove garlic (optional)
  • Small piece of fresh ginger
  • Fresh herbs to taste (mint/parsley)
  • Sea-salt and pepper, to taste
  • Coconut yoghurt and 1/2 tsp chopped herbs to garnish

Method:

  1. Place all ingredients except coconut yoghurt into a high powered blender and blend until smooth.
  2. Adjust seasoning and garnish with coconut yoghurt to taste and extra fresh herbs sprinkled on top. Optionally, you can add a drizzle of extra virgin olive oil for an added layer of richness.
