Ingredients for 2 serves:

  • 100g activated almonds (or almonds that have been soaked in lightly salted water overnight)
  • 550g filtered water
  • 50-70g chia seeds
  • 15-30g pure maple syrup or raw honey
  • 1⁄2 tsp cinnamon, ground
  • 1/2 tsp cardamom, ground
  • 1/2 tsp ginger. ground
  • pinch of nutmeg, ground
  • 1 tsp pure vanilla extract
  • pinch salt

Method:

1.Begin by making almond milk or skip the first 3 steps if using pre-made almond milk: Place almonds in food processor and mill until finely ground. (TM: 20 secs/speed 9.)

2.Add water and blend until smooth and creamy. (TM: 1 min/speed 9.)

3.Strain through a nut bag before proceeding or leave almond milk unstrained for added texture and fibre.

4.Add remaining ingredients, and warm slightly to thicken the mixture. (TM: 5 mins/37C/speed 1.)

5.Pour mixture into 2 bowls or glasses to keep in the fridge until needed. (Mixture may be runny at first, but it will thicken overnight.)

6.Serve cold or at room temperature and top with fresh berries, chopped nuts, cacao nibs and coconut cream.
