- 500 grams chicken breast, cut into cubes
- 2 tablespoons olive oil
- Juice of 1 lemon
- 2 garlic cloves, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh oregano, chopped
- Salt and pepper, to taste
- Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes before grilling)
Method:
- In a bowl, combine olive oil, lemon juice, minced garlic, rosemary, thyme, oregano, salt, and pepper. Add the cubed chicken and toss to coat evenly. Let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more flavour.
- Thread the marinated chicken pieces onto skewers.
- Preheat the grill or BBQ to medium-high heat. Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is thoroughly cooked and has nice grill marks.
- Let the chicken rest for a few minutes after grilling. Serve hot with a fresh salad or roasted vegetables.
