- 10g flaxseed meal
- 60g water
- 2 tbsp parsley
- 200g grain-free bread rolls, quartered
- 150g leek, white part only, roughly chopped
- 125g walnut pieces
- 1 tsp Himalayan sea salt
- 200g feta cheese
- 20g Tamari
- 1 tsp black and white sesame seeds
- 1 batch of your favourite GF pastry
- 1 batch of your favourite tomato sauce
Method:
- Preheat oven to 160C and line a tray with baking paper.
- Mix flaxseed meal with water and set aside to thicken.
- Place parsley and bread into TM bowl and process 10 secs/speed 8.
- Add leeks, walnuts and salt and chop 5 secs/speed 6.
- Add feta, Tamari, and soaked flaxseed meal and mix 20 secs/speed 4 or until combined.
- Spoon the mixture onto the rolled pastry and roll up into a long sausage roll. Carefully bend it around into a circle and use a sharp knife to cut into the roll at intervals to help it bend. Sprinkle with black and white sesame seeds.
- Bake until golden brown – around 20- 30 mins depending on your oven and cool slightly before serving.
- Serve with a bowl of your favourite home-made tomato sauce in the middle and lots of herbs and tomatoes for that red and green Christmassy look.
