• ¼ cup flat leaf parsley, leaves only
  • ¼ cup mint, leaves only
  • 50g olive oil
  • 1 tbsp lemon juice
  • ½ tsp pure maple syrup
  • Mixed lettuce leaves to arrange around your salad plate
  • 2 Lebanese cucumbers
  • 2 sticks celery, thinly sliced
  1. Place all dressing ingredients into TM bowl and blend 10 secs/speed 9.
  2. Arrange lettuce leaves around the serving plate.
  3. Cut cucumbers in half length-ways and scoop out the seeds using a teaspoon. Discard seeds and cut the cucumbers into thin slices.
  4. Toss cucumber and celery with dressing, adjust seasoning if needed and serve on lettuce leaves.
