- zest and juice of 1 orange, pith removed
- 200g blanched almond meal
- 1 tsp baking powder
- 1 tsp cinnamon
- 3 eggs
- 1 tsp vanilla extract
- 60g soft butter (or macadamia oil)
- 70g pure maple syrup
- 2 apples (1 diced and 1 thinly sliced)
Method
- Preheat oven to 160C and prepare a 10-inch cake tin.
- Place orange zest in TM bowl and blitz for 10 secs/speed 10.
- Add almond meal, baking powder and cinnamon to TM bowl and mix for 3 secs/speed 5.
- Add eggs, vanilla extract, butter (or oil if using) and maple syrup and blend 20 secs/speed 5.
- Scrape down the sides of the bowl, add the diced apple and mix for 10 secs/speed 3.
- Pour mixture into the prepared tin and decorate with the apple slices.
- Pour the juice of the orange over the apple slices and bake the cake for 45-55 mins or until a skewer inserted in the cake comes out cleanly.
- Cool before slicing and serving warm or cold.
