• zest and juice of 1 orange, pith removed
  • 200g blanched almond meal
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • 3 eggs
  • 1 tsp vanilla extract
  • 60g soft butter (or macadamia oil)
  • 70g pure maple syrup
  • 2 apples (1 diced and 1 thinly sliced)

Method

  1. Preheat oven to 160C and prepare a 10-inch cake tin.
  2. Place orange zest in TM bowl and blitz for 10 secs/speed 10.
  3. Add almond meal, baking powder and cinnamon to TM bowl and mix for 3 secs/speed 5.
  4. Add eggs, vanilla extract, butter (or oil if using) and maple syrup and blend 20 secs/speed 5.
  5. Scrape down the sides of the bowl, add the diced apple and mix for 10 secs/speed 3.
  6. Pour mixture into the prepared tin and decorate with the apple slices.
  7. Pour the juice of the orange over the apple slices and bake the cake for 45-55 mins or until a skewer inserted in the cake comes out cleanly.
  8. Cool before slicing and serving warm or cold.
