• 120g butter, softened but not melted
  • 50-75g pure maple syrup, to taste
  • 200g blanched almond meal
  • 1 tsp vanilla extract
  • 2 large eggs
  • 250g pitted cherries

Method:

  1. Preheat oven to 160C and prepare a shallow tart/pie dish.
  2. Place butter and maple syrup in TM bowl and beat 10 secs/speed 4.
  3. Add almond meal and mix 10 secs/speed 4 to combine.
  4. Add vanilla and eggs (1 at a time) while beating 20 secs/speed 4.
  5. Pour mixture into prepared dish and add pitted cherries in a decorative pattern and around the edges instead of pastry.
  6. Bake for 20 mins or until mixture is just set.
  7. Serve warm or cold with your choice of cream.

Tip: Use any fruit in season for a quick, easy dessert.
