• 40g macadamia nuts
  • 30g raw almonds
  • 1 tbsp sesame seeds
  • 1 tsp ginger, ground
  • 1 tsp turmeric, ground
  • 1/2 tsp cinnamon
  • ground black pepper
  • 1 tsp cumin, ground
  • 1/2 tsp Himalayan sea salt
  • 1 medium zucchini cut into 2 cm rounds
  • 1 red capsicum cut into rounds the same size as the zucchini
  • 200g Haloumi cut into rounds the same size as the zucchini (or eggplant for a Vegan skewer)
  • coconut oil for brushing on BBQ/hot plate

  1. Preheat the oven to 160C and toast the nuts and sesame seeds until just golden.
  2. Preheat the BBQ plate and prepare vegetables and Haloumi (or eggplant) while nuts and seeds are roasting.
  3. Thread vegetable rounds onto metal skewers.
  4. When nuts are cool grind with the spices and salt in your TM bowl for 10 secs/speed 8. (If you like your dukkah a bit finer grind for a further 5 secs/speed 8.)
  5. Grill skewers on a hot plate brushing with coconut oil.
  6. When cooked serve sprinkled with ‘Macca’ Dukkah.
