• 400g beef mince
  • 2 cloves garlic, minced
  • 2 tsp fresh herbs, chopped
  • 60g Mozzarella, grated
  • 40g Parmesan, grated
  • 1 egg
  • 1 tbsp filtered water
  • 1 tsp Himalayan sea salt (or to taste)
  • cracked black pepper to taste
  • 100g zucchini, grated
  • 500g of your favourite tomato sauce recipe


  1. Preheat oven to 180C and line a baking tray.
  2. Mix everything together in a large bowl and form into walnut-sized balls and place them on the tray.
  3. Bake for 15-20 mins or until meatballs are cooked through.
  4. While they are cooking put ‘noodles’ in a large bowl and cover with boiling water. Let them soak for 5-10 mins then cut chop them a bit using kitchen scissors and drain well.
  5. Serve with the hot meatballs, your favourite tomato sauce recipe and some shredded spinach over the top.
