- 120g butter, softened but not melted
- 50-75g pure maple syrup, or to taste
- 200g blanched almond meal
- 1 tsp vanilla extract
- 2 large eggs
- 2 oranges, 1 peeled and thinly sliced, the other zested and juiced
Method:
- Preheat oven to 160C and prepare a shallow tart/pie dish.
- Place butter and maple syrup in TM bowl and beat 10 secs/speed 4.
- Add almond meal and mix 10 secs/speed 4 to combine.
- Add orange zest and juice, vanilla and eggs (1 at a time) while beating 20 secs/speed 4.
- Pour mixture into prepared dish and add the orange slices in a decorative pattern on the top.
- Bake for 20 mins or until mixture is just set.
- Serve warm or cold with your choice of cream/ice cream or both!
