- 50g raw cashews
- warm water to cover cashews
- 1 clove garlic, peeled
- 1 medium brown onion, peeled and quartered
- 20g olive oil
- 1 tbsp vegetable stock paste
- 450g broccoli, roughly chopped
- 150g zucchini
- 100g spinach
- 700g filtered water
- Himalayan sea salt and pepper to season

- Soak cashews in warm water and begin making the soup.
- Place garlic and onion in TM bowl and chop 2 secs/speed 7.
- Add oil and cook 10 mins/100C/speed 1.
- Drain cashews and add to TM bowl with stock paste, broccoli, zucchini, spinach and water and cook 30 mins/100C/speed 2.
- Blend 1 min/speed 9 or until smooth and creamy.
- Adjust seasoning to your taste and garnish with fresh herbs.
NB: Add a big handful of fresh spinach for added goodness and a little more green colour.
