- 50g nuts of your choice
- 1 large carrot, peeled and roughly chopped
- 1⁄2 red capsicum, roughly chopped
- 500g cabbage, finely sliced
- 1 medium cucumber, diced
- 1 sprig coriander, leaves only
Dressing
- 2cm fresh ginger, peeled
- 30g nut butter of your choice
- 1/2 tsp maple syrup (optional)
- 25g GF Tamari
- 1 tsp apple cider vinegar
- 15g sesame seeds
- 100g warm filtered water
Method:
- Place ginger in TM bowl and chop 2 secs/speed 7.
- Add remaining dressing ingredients to TM bowl and blend for 10 secs/speed 4. Set aside.
- Place carrot and capsicum in TM bowl and chop 2-3 secs/speed 5.
- Add the finely sliced cabbage and reserved dressing and stir together for 10 secs/Reverse/speed 3.
- Pour into serving dishes, add chopped nuts and cucumber dice and sprinkle with coriander leaves.
